I also plan getting SageTV and using it instead of VMC because, simply, VMC is a joke now. Not sure if I’m going to put SageTV on my WHS or what yet (any opinions would be nice as well as what else I would need for that).
My server is mostly parts I had laying around running a spare copy of MCE2k5.

I might go with two 1TB drives but right now I can deal with one to install the OS onto and then add the existing two 720 HDDs into the system after I’ve copied data off of them. In the process of modding the HTPC300 case to hold eight HDDs.
The plan is to take my existing HTPC mobo/CPU/ram and throw that into the case for my server after upgrading them.
